  Baco Noir
Aged in a medium toasted Oak barrel. Light has a delicate finish. Baco noir is an extremely vigorous variety that is best grown on heavy soils. The fruit is usually high in acid and produces wines of good quality that are normally deeply pigmented but low in tannin content. What a red! None of this mamby-pamby light stuff. A Baco Noir, created from hybrid grapes, has heft to it - very complex flavors, with wood, spice, richness, texture. Definitely a long finish, something that can go with a rich BBQ ribs dish. Best of all, there's the infamous Purple Mouth that results! You can offer this wine to unsuspecting friends and see if they notice each others tongues. Probably not, they'll be enraptured by the wine's flavor.
  Cayuga White
A popular selection at our winery. You may find it similar to a Pino Grigio. Cayuga White grapes are fairly new to the world, being pioneered at Cornell's famous Geneva Station in 1972. This is one of the best-suited varieties grown in the eastern U.S. The wine we make from this grape has a medium body and good balance. This versatile grape can be made into a semisweet wine which brings out the fruit aromas, or, using oak aging, into a dry, less fruity wine. When harvested early, it may produce a very attractive sparkling wine with good acidity, good structure, and pleasant aromas. When overripe, however, it can develop strong hybrid aromas with slight American overtones. Cold fermented with champagne yeast to make this a unique wine. Pleasant and crisp with a touch of sweetness on the finish. Taste the off-dry citrus flavor of lemon and grapefruit. Accompanies all seafood dishes. If you like crisp, semi-dry white, with an orange blossom nose, and honeydew, apple taste, this is your wine.
  Chambourcin
Chambourcin (Joannes-Seyve 26-205) is a late-ripening grape that may produce a highly-rated red wine when the fruit fully matures. It requires a long growing season and a site less subject to low winter temperatures. The large, moderately loose bunches set medium-sized blue berries. The vine is very productive, and cluster thinning is required. Wines from this grape are higher in tannins than other French-American hybrids. Chambourcin is a full-bodied red wine made in the traditional manner, using the varietal grape Chambourcin. It makes wines with an intensely dark garnet color with good fruit flavors. It can produce a wide variety of styles of wine. Round in the mouth, with a softness that evokes a Merlot. Marries best with lamb, beef, game, and all the heavier cheeses.
  Chardonnay
Made of 100% Chardonnay grapes. We no longer age this wine in American Oak. We used to, but we like the clean, fresh taste we're getting now better. Why not try some and see if you don't agree. A soft, bright golden color, with slight light-greenish hues. An intense aroma which echoes fresh fruits such as peach and banana. Honey, dry fruits, butter and vanilla flavors are also present in this wine. Kind and lingering flavor, balanced and harmonic. A young Chardonnay, flavored of fresh-cut fruits and roasted hazelnuts. Time well spent in oak barrels gives this wine a greater structure, making it full-bodied, and thus more appropriate with richer foods.
  Cherry Valley Blush
Light, delicate, crisp, clean. One of our best sellers for semi-sweet wine lovers. Similar to a White Zinfandel.
  Cherry Valley Pink
Made from Vitis Lambrusca grapes. A blend of Concord and Niagara grapes. Light and fruity.
  Concord
A vitus lambrusca grape. The aroma is fruity and the taste is a grapey delight. This anytime red has a refreshing grapey flavor and aroma, but is not overly sweet. Very popular. Excellent with fruit and cheese.
  Cranberry Blush
  DeChaunac
Aromatic. Very woody. Aged in White American Oak. Great with Italian food. Silver medal, International Eastern Wine Competition 2001. Very complex with hints of blackberry, tobacco, plum and smoke: layers of flavor with soft, lush tannins.A semi-dry robust full bodied red wine with rich nutty varietal flavor and a distinctive bouquet. Goes great with steak, roast beef, lamb and red sauce pastas. Think of it as a fine 'Pennsylvania Chianti'.
  Kittatinny Red
A blend of French hybrids and Concord makes Kittatinny Red a fruity wine, perfect for the not-so-dry wine drinker. We named it for the ridge that runs along the back of our property. The Appalachian Trail runs along the top of it.
  Leon Millot
A dry, smooth, round, light wine with a lovely garnet color. Rich in cherry and black raspberry flavors, it is a nice compliment to almost all meats. Leon Millot is a French-American hybrid between Goldriesling and an American vine called vitis riparia. Leon Millot produces wines that are fuller-bodied with a nuance of chocolate.Léon Millot (Kuhlmann 194-2) is an early-ripening black grape produced from the same cross as Maréchal Foch. The wines are similar, with distinct berry aromas. Vine characteristics tend to be similar as well, although Léon Millot is usually more vigorous and productive.
  Marachel Foch
Our signature wine. A smooth, light-bodied red wine, rich in cherry and blackberry, cassis and spice. A nice compliment to beef, pork, veal or lamb. (100% Maréchal Foch) Maréchal Foch is a French-American hybrid between Goldriesling and an American vine called vitis riparia. Maréchal Foch usually referred to as simply Foch, is a very-early ripening black grape with small berries and clusters. The vines are hardy and medium in vigor and production. Foch should be grafted on a resistant rootstock to ensure adequate vigor on heavy soils. Birds are attracted to the small, black berries. Wine styles can range from fruity, light red table wines, to hearty, full bodied reds.
  Niagara
This old native variety has a fresh grapey flavor and aroma and the wine is excellent when chilled. A great summertime drink. Just like the grapes grown in Grandma's backyard. This wine is made from the Niagara grape, which is a native American (Labrusca) grape variety grown in the cooler climates of the United States. Native American grape varieties have strikingly different physical (and flavor) characteristics than their European counterparts. A Niagara grape cluster is large with loose, individual berries. The grape skin is thicker and the inside of the grape is fleshy.
  Pink Catawba
Made from Vitis Lambrusca grapes. A very fruity wine. Perfect for summer picnics. Light and crisp. Did You Know: Catawba grapes grew in great profusion across the mid Atlantic States 100 years ago. Welch's made extensive use of the fruit. AND,. it was very popular in England, where it was one of the few grapes that could grow at all. Wordsworth was so enamored of it that he wrote a poem in its honor.
  Proprietor's Red
A blend of three French hybrids: Chambourcin, DeChaunac and Foch, Proprietors Red tends to be dry, but not very oaky. This beautiful wine compliments steak and pasta.
  Proprietor's White
Why do we call this Proprietor's White? Because when the Proprietor drinks white wine, this is generally the white of choice. A blend of three French hybrids—Chardonnay, Vignoles and Seyval—this wine is a lovely compliment to fish, fowl and vegetarian foods.
  Seyval Blanc
Seyval is one of the most widely planted hybrid grapes east of the Rocky Mountains and is the most widely grown grape in Pennsylvania. When grapes are harvested at optimal maturity, wines have attractive aromas of grass, hay, and melon. A crisp, dry varietal white wine that accompanies any food with elegance. A refreshing clean finish makes Seyval Blanc a natural complement to salmon and shellfish. Although increasing in popularity, not all Seyval are created equal. Our Seyval recently won 'best of show' at the San Francisco wine competition.
  Vignoles
Vignoles is a French-American hybrid developed in the late 19th Century. Vignoles is a flavorful, semi-sweet wine. Combined with a semi-sweet finish, the natural acidity helps produce a wine with character, depth and backbone. It has been compared with an Alsacian Gewurztraminer, Reisling or a Mosel. Serve with sharp cheeses, spicy foods (try Cajun, Thai and Indian) as well as pizza. The taste is reminiscent of tropical fruit and green apples.
