Description: A popular selection at our winery. You may find it similar to a Pino Grigio. Cayuga White grapes are fairly new to the world, being pioneered at Cornell's famous Geneva Station in 1972. This is one of the best-suited varieties grown in the eastern U.S. The wine we make from this grape has a medium body and good balance. This versatile grape can be made into a semisweet wine which brings out the fruit aromas, or, using oak aging, into a dry, less fruity wine. When harvested early, it may produce a very attractive sparkling wine with good acidity, good structure, and pleasant aromas. When overripe, however, it can develop strong hybrid aromas with slight American overtones. Cold fermented with champagne yeast to make this a unique wine. Pleasant and crisp with a touch of sweetness on the finish. Taste the off-dry citrus flavor of lemon and grapefruit. Accompanies all seafood dishes. If you like crisp, semi-dry white, with an orange blossom nose, and honeydew, apple taste, this is your wine.

Varietal Definition
Cayuga:
A hybrid cross between the Johannisberg Riesling and Seyval Blanc grapes. Makes a fruity white wine of mild intensity somewhat similar to Aurore. Widely grown in the Finger Lakes region of New York State and other cool regions of North America.
