Description: The 2000 vintage is an exceptional release from the Reynolds Family Winery. The 2000 vintage far exceeded the 1999 vintage due to meticulous vineyard practices and continually reducing the fruit yield to intensify the flavor and color, The 100% Cabernet Sauvignon is produced from grapes grown exclusively on the 14 -acre home vineyard. The combination of two Bourdeaux Cabernet clones, #337 and #4, create exceptional complexity. The Cabernet clone #337 exhibits intense color and structure, while clone #4 contributes deep dark fruits, black currant, tobacco and spice components to the flavors and aromas. Artisan winemaking techniques include the gentle treatment of the fruit in small bin fermentation lots, three-daily hand punch down of caps, and modest bladder pressing. Additionally, depth and complexity are added through newer rack and return tank techniques. The 2000 vintage was aged in 90% French oak and 10% American oak from the highest quality coopers including Bossuet, Seguin Moreau, Francois Freres and Nadalie. The broad spectrum of flavors is highlighted by dark cherry, black currant, with nuances of spice, tobacco, and toast. This wine is expressive and complex with rich, velvety tannins. For maximum enjoyment cellar and serve at 58 degrees.

Cabernet Sauvignon:
Cabernet Sauvignon is the most widely planted and significant among the five dominant varieties in France’s Bordeaux region, as well as the most successful red wine produced in California. Though it was thought to be an ancient variety, recent genetic studies at U.C. Davis have determined that Cabernet Sauvignon is actually the hybrid offspring of Sauvignon Blanc and Cabernet Franc. Cabernet Sauvignon berries are small with black, thick and very tough skin. This toughness makes the grapes fairly resistant to disease and spoilage and able to withstand some autumn rains with little or no damage. It is a mid to late season ripener. These growth characteristics, along with its flavor appeal have made Cabernet Sauvignon one of the most popular red wine varieties worldwide.
