Description: Nils and his team are rightly proud of this effort, particularly given the fact that 1998 was such an uneven year, and Proud they should be! Mark and I agreed on this wine: chocolate, tar, plum, and rich fruit are all on the nose. A deep red to purple in the glass, this wine shows the extraction and color that promises to treat the palate...and it does! I liked the full body, tight tannins and nice vanilla finish. Mark, too, was caught by the bursting flavors that greet you upon tasting, he thought the Cab held a great potential to age well. I enjoyed this wine to the end, and found two hours after opening that we were catching nuances and flavors still blossoming in the glass... great indicator that you can lay this down for ten years.

Varietal Definition
Cabernet Sauvignon:
Cabernet Sauvignon is the most widely planted and significant among the five dominant varieties in France’s Bordeaux region, as well as the most successful red wine produced in California. Though it was thought to be an ancient variety, recent genetic studies at U.C. Davis have determined that Cabernet Sauvignon is actually the hybrid offspring of Sauvignon Blanc and Cabernet Franc. Cabernet Sauvignon berries are small with black, thick and very tough skin. This toughness makes the grapes fairly resistant to disease and spoilage and able to withstand some autumn rains with little or no damage. It is a mid to late season ripener. These growth characteristics, along with its flavor appeal have made Cabernet Sauvignon one of the most popular red wine varieties worldwide.
