Description: The release of our third vintage, Parry Cellars 2001 Cabernet Sauvignon, is like visiting our home in St. Helena. In one sip, you feel the warm sunshine on the grapes, smell the aroma of harvest and savor the elegance of ripe fruit. This year?s harvest produced another elegant, well-balanced cabernet with loads of fruit and soft, silky tannins. The wine has an intense deep garnet color and aromas of lush boysenberry, blueberry, and pomegranate with softer layers of cedar, smoke, currant and nutmeg. On the mouth, you are greeted with a soft, sweet velvety entry leading into a weighty mid-palate filled with juicy berry flavors. The long, lingering finish is filled with ripe cassis and berries. The wine was aged 18 months in new French (38%), American (12%) and Hungarian (12%) and once used French (38%) oak barrels before being bottled without fining or filtration. We are sure you will enjoy this wine now or after bottle aging for a few years.

Varietal Definition
Cabernet Sauvignon:
Cabernet Sauvignon is the most widely planted and significant among the five dominant varieties in France’s Bordeaux region, as well as the most successful red wine produced in California. Though it was thought to be an ancient variety, recent genetic studies at U.C. Davis have determined that Cabernet Sauvignon is actually the hybrid offspring of Sauvignon Blanc and Cabernet Franc. Cabernet Sauvignon berries are small with black, thick and very tough skin. This toughness makes the grapes fairly resistant to disease and spoilage and able to withstand some autumn rains with little or no damage. It is a mid to late season ripener. These growth characteristics, along with its flavor appeal have made Cabernet Sauvignon one of the most popular red wine varieties worldwide.
