Description: Our 2003 Estate Merlot is a beautiful deep dark red with a wonderful bouquet of ripe plum and fig with toasty vanilla undertones. The mouthfeel is full and creamy with ripe flavors of plum and black cherry intermingling with cocoa nut and a minerally spiciness. This all combines in an amazingly complex and concentrated wine finishing within a framework of toasty oak and firm acidity. Our best Merlot to date. This is 100% Merlot made from grapes grown on the Midnight Estate Vineyard. Cropped at 1.5 tons per acre in 2001, the resulting wine is a very ripe and extracted style of Merlot. It shows Firmer acidity than most Merlots and is accented by generous American oak tannins that give this wine tremendous ageability for many years. Decant for several hours prior to trying this wine. A great wine to sip and study!

Varietal Definition
Merlot:
Merlot is known as a Noble Bordeaux varietal. Although it came to France in the first century, it was not named until the 1880s. Merlot was originally used only for blending, as it is soft and compliant, very useful in softening other Bordeaux wines like Cabernets. Recently in California and Chile it became popular as a 100% varietal wine. Merlot tends to be easier to grow in a variety of soil conditions and is harvested earlier in the year than Cabernet. Although most Merlots are made to be drunk earlier, there are many with complexities of a Cabernet. Flavors of plum, black cherry, violet, chocolate and orange pair well with rich, red pasta dishes, hearty chicken dishes, and any beef combination that you fancy. The perfect match of course is chocolate. Not only does the chocolate compliment the wine and vice-versa, but the essence of both flavors linger eternally.
