2000 Reserve Cabernet Sauvignon Wine Details

Description: Selecting the best of the vintage for a reserve begins with recognizing the fruit potential in the field (67% hillside vineyards), then maximizing quality in the cellar. Each vineyard lot is aged separately and after 18 months of aging in 60% new French oak barrels, we taste all the barrels and select the best tasting barrels for blending for our reserve. Once the blend is made, the wine goes back to barrel for another 6 months for a finishing touch of barrel aging. Red and black fruits, toast, spice, black cherries, matchstick, and hints of chocolate weave an intricate, rich tapestry of complex flavors. A deeply aromatic wine with hints of eucalyptus and menthol. The broad mouth of flavors and velvety tannins provide good definition and a long finish to entice your palate.

Varietal Definition
Cabernet Sauvignon:
Cabernet Sauvignon is the most widely planted and significant among the five dominant varieties in France’s Bordeaux region, as well as the most successful red wine produced in California. Though it was thought to be an ancient variety, recent genetic studies at U.C. Davis have determined that Cabernet Sauvignon is actually the hybrid offspring of Sauvignon Blanc and Cabernet Franc. Cabernet Sauvignon berries are small with black, thick and very tough skin. This toughness makes the grapes fairly resistant to disease and spoilage and able to withstand some autumn rains with little or no damage. It is a mid to late season ripener. These growth characteristics, along with its flavor appeal have made Cabernet Sauvignon one of the most popular red wine varieties worldwide.
