Description: The wine’s deep red and purple color gives way to aromas of black cherry, blackberries, cedar, dried herbs, leather and tobacco. This medium, full-bodied Cabernet Sauvignon has flavors of currant, licorice, earth and florest floor with a powerful, lingering tannic finish showing great structure and acidity. This estate fruit was hand sorted and gently crushed into tank to cold soak for 48 hours to extract fruit flavors and deep, rich color. Fermentation went for 14 days and the wine was left for extended masceration (grape skin contact) for an additional week. After a light pressing to preserve elegence, the wine went into 100% French oak barrels. The wine was racked every 6 months and then aged for 21 months in 60% new oak and lightly filtered just prior to bottling.

Varietal Definition
Cabernet Sauvignon:
Cabernet Sauvignon is the most widely planted and significant among the five dominant varieties in France’s Bordeaux region, as well as the most successful red wine produced in California. Though it was thought to be an ancient variety, recent genetic studies at U.C. Davis have determined that Cabernet Sauvignon is actually the hybrid offspring of Sauvignon Blanc and Cabernet Franc. Cabernet Sauvignon berries are small with black, thick and very tough skin. This toughness makes the grapes fairly resistant to disease and spoilage and able to withstand some autumn rains with little or no damage. It is a mid to late season ripener. These growth characteristics, along with its flavor appeal have made Cabernet Sauvignon one of the most popular red wine varieties worldwide.
