Cabernet Sauvignon Viking Estate RESERVE

Cabernet Sauvignon Viking Estate RESERVE Wine Details
Price: $75.00 per bottle

Description: This is the perfect site for the production of ultra-premium cabernet sauvignon. The thin calcareous rich soils that overlay the limestone-clay bedrock ensure vine stress and incredible flavor concentration in the resulting wine. The classic warm days and south facing topography of the vineyard maximizes ripeness and flavor intensity, while the cooling influence of the nearby Pacific Ocean (diurnal variations of as much as 50°) enable the grapes to retain their natural acidity. The 1700 ft. elevation enhances phenolic development, giving intense color and tannin structure. This 2002 Viking Cabernet Sauvignon speaks of powerful mountain fruit. Its palate-gripping flavors of bright red cherries with underlying hints of tobacco leaf are classic varietal characteristics enhanced by this extreme site.

Varietal Definition
Cabernet Sauvignon:
Cabernet Sauvignon is the most widely planted and significant among the five dominant varieties in France’s Bordeaux region, as well as the most successful red wine produced in California. Though it was thought to be an ancient variety, recent genetic studies at U.C. Davis have determined that Cabernet Sauvignon is actually the hybrid offspring of Sauvignon Blanc and Cabernet Franc. Cabernet Sauvignon berries are small with black, thick and very tough skin. This toughness makes the grapes fairly resistant to disease and spoilage and able to withstand some autumn rains with little or no damage. It is a mid to late season ripener. These growth characteristics, along with its flavor appeal have made Cabernet Sauvignon one of the most popular red wine varieties worldwide.
