Description: JAX Vineyards produce this distinctive Cabernet Sauvignon by dry-farming the estate's thirty-seven year old vines. At the foot of Mt. St. Helena, in Napa Valley, the vineyards bask in the ideal conditions of the northern Calistoga sun. Bottle photo of our 2003 Cabernet Sauvignon Working together, the Jacksons (Jane, Dave, Kimberly and Trent) select the optimal grapes from their vineyard to produce their tenth vintage of Cabernet Sauvignon. Enjoy! Deep ruby red hues complimenting the ripe red cherry nose. This wine reveals strong tannins backed by layers of dark cherry and cassis fruit (signature fruit flavors of the JAX Vineyards site year over year). These fruit layers follow through with cinnamon and clove accents. The 2003 is a medium-long aging wine, so drink now through 2015.

Varietal Definition
Cabernet Sauvignon:
Cabernet Sauvignon is the most widely planted and significant among the five dominant varieties in France’s Bordeaux region, as well as the most successful red wine produced in California. Though it was thought to be an ancient variety, recent genetic studies at U.C. Davis have determined that Cabernet Sauvignon is actually the hybrid offspring of Sauvignon Blanc and Cabernet Franc. Cabernet Sauvignon berries are small with black, thick and very tough skin. This toughness makes the grapes fairly resistant to disease and spoilage and able to withstand some autumn rains with little or no damage. It is a mid to late season ripener. These growth characteristics, along with its flavor appeal have made Cabernet Sauvignon one of the most popular red wine varieties worldwide.
