Description: Our red wines are destemmed, and allowed to ferment for up to two weeks prior to pressing. Fermentation, secondary fermentation, and racking took place in stainless tanks. Traditional methods require Cabernet to age quietly for 12-24 months in the barrel with additional bottle aging. Look for an April 2007 release of Ozan Cabernet.
