Description: A select portion of the Cabernet vineyard, with reduced yields and delicate handling produced the grapes that were fermented for a longer period, making a unique cabernet with extra concentration of minerals, tannins, and flavors. The wine was racked without pressing to create softness. Two years of aging in old French Oak Barrels, accentuated the tart cherry flavors. The wine was unfiltered to protect the original flavor of the harvest. Aging potential exceeds 15 years. A great example of high quality wines from the Central Delaware Valley Viticultural District. Food Combinations: This Classical Bordeaux styled wine fits with red meats, steak, venison, pasta with tomato sauces, tuna with tomato sauces and capers. Excellent with rack of lamb. Dessert: Milk Chocolate, Chocolate Mousse. Note: Please decanter this wine for 2 hours before enjoying.

Varietal Definition
Cabernet Sauvignon:
Cabernet Sauvignon is the most widely planted and significant among the five dominant varieties in France’s Bordeaux region, as well as the most successful red wine produced in California. Though it was thought to be an ancient variety, recent genetic studies at U.C. Davis have determined that Cabernet Sauvignon is actually the hybrid offspring of Sauvignon Blanc and Cabernet Franc. Cabernet Sauvignon berries are small with black, thick and very tough skin. This toughness makes the grapes fairly resistant to disease and spoilage and able to withstand some autumn rains with little or no damage. It is a mid to late season ripener. These growth characteristics, along with its flavor appeal have made Cabernet Sauvignon one of the most popular red wine varieties worldwide.
Delaware:
A native American hybrid grape variety used to make dry, sweet and sparkling white wines of good quality and mild "foxy" character. Commonly grown in the Eastern U.S. where it has considerable popularity when made into "ice-wine".
