Cabernet Sauvignon, Napa Valley Wine Details

Description: We are, once again, very pleased to bring you a wine that makes us proud! Sourced from several small vineyards in and around St. Helena, Napa Valley, we have our second vintage that takes us along our path—an obsession, really—of producing high quality, Bordeaux style wines that showcase the quality and class the Napa Valley can generate. Our winemaker crafted a wine that is drinkable upon release but exhibiting great aging potential well beyond 2010, this wine features a nicely focused bouquet of ripe black cherry, red currant with hints of shaved dark chocolate, and seamless oak integration. The wine is richly flavored, medium to full weight, neatly balanced and surprisingly polished given its age. With a fine tannin finish and beautiful detail throughout, it will complement a wide variety of foods (a rare thing for young Cabernets today!) Perfect for classic Duck Breast, Beef Filet or even Salmon with a red wine reduction, but just as good with casual Backyard Barbecue. But we digress…

Varietal Definition
Cabernet Sauvignon:
Cabernet Sauvignon is the most widely planted and significant among the five dominant varieties in France’s Bordeaux region, as well as the most successful red wine produced in California. Though it was thought to be an ancient variety, recent genetic studies at U.C. Davis have determined that Cabernet Sauvignon is actually the hybrid offspring of Sauvignon Blanc and Cabernet Franc. Cabernet Sauvignon berries are small with black, thick and very tough skin. This toughness makes the grapes fairly resistant to disease and spoilage and able to withstand some autumn rains with little or no damage. It is a mid to late season ripener. These growth characteristics, along with its flavor appeal have made Cabernet Sauvignon one of the most popular red wine varieties worldwide.
