Description: One of two Estate Cabernet vineyards owned by Clos Pegase, Graveyard Hill is an eleven-acre parcel on the southeastern edge of Mitsuko’s Vineyard in Carneros. According to local lore, the farmer who owned this land previously named the hill after plowing it, and, turning back to admire his work, remarked how all the whites stones he turned up looked just like a graveyard. These same white cobblestones were not forgotten when it came time to plant vines on this ground. Atypical of the shallow clay soils surrounding this piece, Graveyard Hill is a rocky, well-drained outcropping, perfect for the cultivation of Cabernet Sauvignon. The drier, warmer soils, coupled with the long growing season allow the variety a generous cushion to ripen, yielding elegant and powerful wines, with dense tannins and generous fruit.

Varietal Definition
Cabernet Severny:
Hybrid red wine variety created in Russia to withstand harsh cold climatic conditions. Small acreages currently grown in Canada.
Cabernet Sauvignon:
Cabernet Sauvignon is the most widely planted and significant among the five dominant varieties in France’s Bordeaux region, as well as the most successful red wine produced in California. Though it was thought to be an ancient variety, recent genetic studies at U.C. Davis have determined that Cabernet Sauvignon is actually the hybrid offspring of Sauvignon Blanc and Cabernet Franc. Cabernet Sauvignon berries are small with black, thick and very tough skin. This toughness makes the grapes fairly resistant to disease and spoilage and able to withstand some autumn rains with little or no damage. It is a mid to late season ripener. These growth characteristics, along with its flavor appeal have made Cabernet Sauvignon one of the most popular red wine varieties worldwide.
