Cabernet Sauvignon, Speciale

Cabernet Sauvignon, Reserve Speciale Wine Details
Price: $100.00 per bottle

Description: At Arrowood Winery, we think all of our wines are special; once in a while, we produce a wine that exceeds even our wildest expectations. Our 2001 Reserve Cabernet Sauvignon is just one of those wines. Richard Arrowood believes that this is one of the top three Cabernet Sauvignon wines Arrowood has produced in the Reserve style; it is right up there with the 1994 and 1997 vintages. And we’re not the only ones who think so. Robert Parker, the highly discriminating wine critic, gave this wine 96 points and described it as “…one of the best Cabernet’s produced in Sonoma County…” We have no problem agreeing with that one! This 100% varietal wine is a complex blend of six of our favorite Sonoma County vineyards. Keeping vineyard lots separate, we aged them for two years in French and American oak barrels. After creating the Reserve master blend, we returned it to 100% French oak barrels for another five months of aging. Finally, we bottled it unfined and unfiltered. This aversion to over-manipulation will allow the wine to be even more pronounced in its complexity and finesse. This seductive wine tantalizes the senses from start to finish. In the nose, intense aromas of fresh crushed blackberries mingled with pleasing notes of crème de cassis and hints of vanilla. Dark fruit flavors of cassis and blackberry dominate on the palate and are beautifully balanced by bold, firm tannins and substantial structure. A clean, focused and lengthy finish completes this very harmonious, very complex wine. Our 2001 Cabernet Sauvignon, Réserve Spéciale can be enjoyed on its own, or paired with delicious cuisine. Keep it simple and try it with a pan roasted salmon, grilled rib eye or flank steak, or go for a more refined entrée like rack of lamb or prime rib. It’s your choice – with this remarkable wine you can’t go wrong.

Varietal Definition
Cabernet Sauvignon:
Cabernet Sauvignon is the most widely planted and significant among the five dominant varieties in France’s Bordeaux region, as well as the most successful red wine produced in California. Though it was thought to be an ancient variety, recent genetic studies at U.C. Davis have determined that Cabernet Sauvignon is actually the hybrid offspring of Sauvignon Blanc and Cabernet Franc. Cabernet Sauvignon berries are small with black, thick and very tough skin. This toughness makes the grapes fairly resistant to disease and spoilage and able to withstand some autumn rains with little or no damage. It is a mid to late season ripener. These growth characteristics, along with its flavor appeal have made Cabernet Sauvignon one of the most popular red wine varieties worldwide.
