These grapes come from Seneca Lake vineyard allowing a long ripening season. Fermentation on the skins at higher temperatures and “punching down” 3 to 4 times a day, followed by extended skin maceration after fermentation, gives this wine a deep, rich color along with abundant tannins. The cooler Finger Lake climate allows this variety to develop wonderful raspberry, violet and cedar aromas. Barrel aging in American and French oak for 10 months gives this wine a deep structure and full mouth feel with rich tannins.
A favorite of red wine drinkers, this goes great with steak and mushrooms or pasta tossed with fresh tomatoes, basil and Asiago cheese.
