Description: The great grape of Germany, Riesling is enjoying an overdue resurgence of popularity, particularly since Canadian wineries started working with the grape to produce some excellent quality wines. Fresh 'Granny Smith' apple and lemon peel flavours with racy acidity are typical flavours in youth, with oily kerosene tones developing as the wine matures. This New World Rieslings is full of vibrant rich fruit. Cool-fermented in stainless steel using selected yeast strains and left on the lees for several months. Completely dry with a richly extracted texture, concentrated citrus fruit and very taut, minerally acid balance. Best approached in 2004, and capable of cellaring through at least 2012. Food matches: Sushi; freshwater fish (trout, pickerel); shellfish (crab, scallops, lobster); choucroute garnis; pork or veal cutlets."
