Description: This wine is an exciting blend combining the apple fruit nose of Nova Scotia grown L’Acadie Blanc grapes with the balanced, crisp body of Chardonnay from Ontario. A vanilla smoke, green apple nose leads into a long silky finish on the palate. This is a well-balanced, pleasing wine which pairs well with seafood and chicken dishes.

Varietal Definition
Chardonnay:
Chardonnay is by far the most widely planted grape crop in California and dominates California’s cooler, coastal, quality wine regions. The natural varietal ‘taste and smell’ of Chardonnay is surprisingly unfamiliar to many wine drinkers, as its true character is often guised with dominating winemaking signatures. Chardonnay’s rather subdued primary fruit characteristics lean toward the crisp fruitiness of apples, pears and lemon, but the variety’s full body is capable of supporting a host of complementary characteristics, such as oak, butter and vanilla. Regardless of what is the appropriate style for Chardonnay, the varietal continues to dominate vineyard plantings in every corner of the world. Close attention to clonal selection has made this broad geographic and climactic range of Chardonnay viable in thoughtful viticultural hands.
L'Acadie:
L’Acadie Blanc is a Vineland (Ontario, Canada) hybrid of great commercial significance in Nova Scotia, Canada. Its name derives from its first commercial wine use in the Annapolis Valley region of Nova Scotia, originally settled by the Acadian French in the 17th century. The grape is well adapted to the Nova Scotian winters and a relatively early ripener. The wine in its most basic varietal form is not dissimilar to non-oaked cool climate Chardonnays made along the same lines such as Chablis. It has a naturally crisp acidity, to balance a broad, full-bodied palate with apple and citrus characteristics. Like Chardonnay, L’Acadie Blanc lends itself to a considerable number of winemaking styles. Oak fermentation and or maturation, sur lees aging and partial skin contact all contribute to very stylish and complex wines.
