Description: Composed of our 5 clones of Pinot Noir, the 2004 growing season resulted in a full, rich wine with 13.7% alcohol. The crop again had extended cold maceration and was split into two batches: one was hot fermented, resulting in dark, earthy flavours, and the other cold-fermented, to maintain more of the Vancouver Island rich dark black cherry fruit character. This vintage has really come together well over 2006 and will continue to improve for several years. The wine was finished in French Nevers oak (50% new, 50% one year old) and is unfined and unfiltered. Decant the entire bottle before serving, as you may find some sediment composed mostly of tartrates. Sealed with a crown cap to better preserve the quality of the wine.
