Description: The harvest season in 1999 was cool and kept us waiting until mid October to even begin picking our Cabernet Sauvignon grapes. The incredible intensity of the resulting fruit was well worth the wait. This 100% Cabernet Sauvignon shows great depth and concentration of fruit from start to finish. Twenty-four months of aging in new French oak barrels contributes a beautiful toasty vanilla character to its rich fruit intense aroma. Intense in flavors of plums and blackberries this spectacular wine is velvet on the palate. Just after fermentation this wine received an extended period of skin contact, which moderated the tannin so as to make this wine very drinkable now, however, withproper cellaring, it will continue to develop beautifully for the next 20 years.

Varietal Definition
Cabernet Sauvignon:
Cabernet Sauvignon is the most widely planted and significant among the five dominant varieties in France’s Bordeaux region, as well as the most successful red wine produced in California. Though it was thought to be an ancient variety, recent genetic studies at U.C. Davis have determined that Cabernet Sauvignon is actually the hybrid offspring of Sauvignon Blanc and Cabernet Franc. Cabernet Sauvignon berries are small with black, thick and very tough skin. This toughness makes the grapes fairly resistant to disease and spoilage and able to withstand some autumn rains with little or no damage. It is a mid to late season ripener. These growth characteristics, along with its flavor appeal have made Cabernet Sauvignon one of the most popular red wine varieties worldwide.
