Description: Barrel-fermented in the traditional Burgundian method, we stirred the lees weekly for nine months to develop the tropical bouquet and creamy texture, then bottled and aged the wine for five months to allow the myriad of fruit and oak flavors to marry and soften into this overall complex and well-balanced wine. Intense tropical aromas of pineapple and papaya are enhanced by notes of peach and green apple. Robust with flavorsof citrus, pear and butterscotch, it is mouth-coating and satisfying, fi nishing with honey and cream. Serve slightly chilled with striped bass in avocado sauce or apricot-stuffed chicken breasts. Enjoyable now, it will improve with proper cellar aging for three years, and mature gracefully for up to eight years.

Varietal Definition
Chardonnay is by far the most widely planted grape crop in California and dominates California’s cooler, coastal, quality wine regions. The natural varietal ‘taste and smell’ of Chardonnay is surprisingly unfamiliar to many wine drinkers, as its true character is often guised with dominating winemaking signatures. Chardonnay’s rather subdued primary fruit characteristics lean toward the crisp fruitiness of apples, pears and lemon, but the variety’s full body is capable of supporting a host of complementary characteristics, such as oak, butter and vanilla.
