Description: This estate fruit is the first harvest of grapes after extensive vineyard renovations and the wonderful quality of the wine reflects those changes. The fruit fermented for twenty days, using two different yeasts to achieve the greatest color intensity and classic Cabernet characteristics. After malolactic fermentation, the wine was left sur lies for five months in French Oak barrels. The wine was than racked, aerated, and put back into barrels to rest for another 14 months before bottling. The result is a classic Cabernet with an Old World winemaking style. The wine is a deep garnet with a nose of deep, roasted fruits and cherries, rich oak and vanilla. The rich, viscous mouth has layers of blackberries that linger for an incredible time. This wine needs a chance to open up to reveal its depth so we suggest decanting, if possible. This would pair well with any red meat dish, game, braised meats, and rich cheeses.

Cabernet Sauvignon:
Cabernet Sauvignon is the most widely planted and significant among the five dominant varieties in France’s Bordeaux region, as well as the most successful red wine produced in California. Though it was thought to be an ancient variety, recent genetic studies at U.C. Davis have determined that Cabernet Sauvignon is actually the hybrid offspring of Sauvignon Blanc and Cabernet Franc. Cabernet Sauvignon berries are small with black, thick and very tough skin. This toughness makes the grapes fairly resistant to disease and spoilage and able to withstand some autumn rains with little or no damage. It is a mid to late season ripener. These growth characteristics, along with its flavor appeal have made Cabernet Sauvignon one of the most popular red wine varieties worldwide.
