Ash Hollow Vineyards and Winery

Ash Hollow Vineyards and Winery Nature. Harmony. Tradition. Wisdom. Magic. These elements are the underpinning of Ash Hollow wines. Superb vineyards in unique locales in the state of Washington with near-perfect seasonal growing conditions.A team who believes in winegrowing, rather than winemaking. The rituals, both modern and ancient, that transform grapes to wine. Seasoned professionals working together to make smart decisions. And that certain something that can’t be defined by logic or science – that sense of place that makes Ash Hollow wines so special. Ash Hollow produces wines that are balanced and elegant, wines that reflect their individual and unique terroir. The Bordeaux-style Estate Blend hails from our vineyards in Walla Walla Valley, an area that is rapidly gaining recognition as a world-class area for red wine grapes. The Columbia Valley provides exceptional white wine grapes that inspired the winemaking team to produce a “super-white” blend called Somanna.

Products

  Cabernet Sauvignon
Classic tastes of raspberry, cranberry and ripe red plums are complemented by milk chocolate and herbs d’provence tastes, along with touch of sweet vanilla from the oak barrels and an earthy reminder of the beauty of the Walla Walla Valley.
  Merlot
The 2003 Merlot from our Ash Hollow Vineyard has been grown with care and transformed in the cellar into a wine that is sure to please.
  Nine Mile
Named for the hill upon which the first Ash Hollow vineyard sits, this delightful melange of Cabernet Sauvignon, Merlot, and Cabernet Franc stands out in a crowd. The complex nose is full of earthy scents, the most noticeable being smoked cedar, cocoa, and wild rose. This earthiness continues on the palate with pine, cocoa, leather, and tobacco. Well proportioned balance and body build to a delicate tannic finish that is both smooth and bright with subtle notes of blueberry and pine. Try with Peking duck in a plum sauce.
  Somanna
The aromas of Bosc pear and Fuji apple hit the nose first with hints of straw and cut grass soon to follow. The balance of the blend is especially pleasing in the nose as the more aromatic and floral Pinot Gris is tamed by the green grassiness of the Sauvignon Blanc. The mouth flavors are equally inviting with soft fruit, citrus, and honeydew drawing you in before a crisp minerality finish on the palate. This wine is meant to enjoy now; either on its own or complimenting dishes from standard light and seafood fare to spicy cuisine. The acidity of Somanna begs to cut through your favorite spicy dishes. Yum!
  Syrah
Notes of black pepper and ripe plums are joined by wisps of violet on the nose. A delightful complexity of layers of plums, cherries, boysenberry and mulberry notes are joined by hints of clove and earth, then overlaid with tea-like tannins and a bittersweet chocolate.
  Terassa
Hand-picked from the best fruit Stone Tree and Candy Mountain vineyards had to offer, Ash Hollow's Terassa is an enchanting blend of Cabernet Sauvignon, Merlot, and Cabernet Franc. Wonderful aromas of butter-caramel, rose petals, plum, toast, and spices greet the nose when you inhale deeply of this dusky purple wine. The robust mid-palate rises with smooth, smoky layers of rosemary, currant, and fig, while the creamy finish rolls to the back of the throat like butter. Gentle transition and good structure from start to finish give Terassa "the wonderment of a miracle". Pair with grilled rosemary lamb chops smothered in olive-mint salsa.
