Justin Vineyards & Winery In 1981, Justin and Deborah Baldwin purchased 160 acres of land in the remote Adelaide Valley west of Paso Robles on California's Central Coast. They also released their first wine, a sparkling Blanc de Noir made from purchased fruit (their vines were not yet mature). In 1982, they planted 72 acres, concentrating on the three classic red Bordeaux grape varietals, Cabernet Sauvignon, Merlot and Cabernet Franc, and Chardonnay. Nineteen eighty-five marked construction of the winery and in 1987, their first crush of 100% estate JUSTIN wines. The business continued to grow throughout the late eighties and early nineties, with increased production, a new winery building, and the opening of the JUST Inn, a luxurious French auberge. The Baldwins introduced the winery's monthly Guest Chef Dinners featuring some of the nation's best chefs as they prepare elegant candlelight dinners set amidst the barrels within the cellars. In 1998, they opened a restaurant on premise named "Deborah's Room." It quickly became a destination for fine dining, and truly highlights the winery's commitment to food and wine, as it and their chef make up the only program of its kind on the Central Coast. Their guest chef dinner series is another way they like to promote their wines to the public. At the forefront of the Baldwins' philosophy is a desire for their wines to be entirely estate grown, produced and bottled and to remain a family business with a reputation for being the leading boutique producer of premium wines on the Central Coast. They also want to have fun along the way and celebrate the healthful and fraternal contribution wine has made to society. Beginning with their first vintages, and continuing through their latest releases, JUSTIN wines have received numerous awards and accolades, including the London International Wine & Spirit Competition's Pichon Longueville Comtesse de Lalande trophy awarded to the 1994 ISOSCELES for the Best Blended Red Wine Worldwide and named number 6 wine in the world by The Wine Spectator in 2000 for their 1997 ISOSCELES!

From US Highway 101 exit at Hwy. 46 East, and travel West on 24th Street. Proceed on Lake Nacimiento Drive 7 miles, then continue West on Chimney Rock Road for 8 more winding miles to JUSTIN Vineyards & Winery on the right hand side.

  Cabernet Reserve
This intense, Paso Robles, 100% Cabernet Sauvignon shows its true dark purple color in the glass. Black fruit, currant and underlying layers of cedar and leather show off the French oak influence. A soft entry combines flavors of cherry, plum and a hint of mint. The full-bodied mid palate segue into a lush, ripe finish with nuances of cedar and caramel.
  Cabernet Sauvignon
The wine is dark purple with a surrounding outline of cherry red. Aroma’s of black cherry, currant and vanilla jump out of the glass. A soft, delicate entry is woven into a long intense palate that features flavors of blueberry, cassis and a touch of spice. Supple, ripe tannins with a hint of chocolate hover on the finish.
  Chardonnay
The 2005 vintage began with heavily moisturized soils as the result of an extremely wet winter. Early spring remained cool and wet, providing vines with all the water necessary to promote a strong, well developed canopy. July temperatures lingered in the mid 90’s, allowing healthy canopies to absorb the consistent heat and bring verasion quickly. Summer and fall were cooler than normal, allowing extended hang time for flavor development. Lower brix resulted in lower alcohols, better acidity and brighter fruit. Chardonnay was harvested in late September, 7 weeks later than normal.
  Deborah's Delight (Orange Muscat)
Made from Alexander Muscat grapes, Deborah's Delight wafts fragrant orange and orange blossom aromas. Its balance of sweetness and acidity make it an ideal pairing wine for many non-chocolate desserts- from creme brulee to vanilla tarts. We pick the grapes for Deborah's Delight at the same ripeness that we pick our Chardonnay grapes. After about 1 to 2 days of fermentation, we stop the fermentation while there is still sugar remaining by adding brandy. In this manner, the wine remains sweet but also has enough alcohol to keep the wine in balance. The wine is then aged for eight months in stainless steel tanks to maintain aromas and then presented in a beautiful bottle with a metallic gold wax.
  Isosceles
JUSTIN's flagship wine. The 2003 Isosceles in all sizes is now completely sold out. Wine Society members will still be getting two bottles in their June shipment, and may purchase one bottle if they visit the tasting room while supplies last.
  JUSTIFICATION
Aromas of black cherry, spice and leather make up the nose of this wine. The entry is filled with red and black fruit, closely followed by a lengthy mid palate with coffee and dark chocolate flavors. The finish is layered with hints of licorice, caramel and a touch of vanilla.
  Obtuse
The wine has dark ruby color. A bittersweet chocolate note accentuates jammy fruit aromas of raspberry, sweet cherry and plum. The wine is lush and sumptuous on the palate with chocolate, cherry and rich plum flavors.
  Orphan
Bright red fruit combine with a hint of leather and toasted oak on the nose of this unique blend. The entry is soft, approachable and balanced with proper acidity and tannin structure.
  Paso Syrah
Aromas of black cherry, plum and white pepper makes up the nose of this wine. A soft entry is balanced by good acidity that pronounces the ripe fruit in this wine. Black fruit and spice combine with gamy flavors and a soft, round toasted oak finish.
  Sauvignon Blanc
Meyer lemon, orange rind and fresh cut grass aromatics make this wine scream acidity. The entry has crisp tropical fruit flavors that flow into a soft, round, concentrated mid palate. The natural acidity in this wine creates a balanced, clean, layered finish.
