  Apple Cider
Try our authentic farmhouse cider made from locally-grown apples. This off-dry apple wine is especially tasty with a cheddar omelette, smoked trout, endive and apple salad, or roasted butternut squash soup with crème fraiche and chives.
  Cabernet Franc Estate
This Cabernet Franc from the superb 2001 vintage is packed with distinctive cherry and herbal flavors, that blend well with fine grained tannins. Pair this with roast pork or mushroom risotto.
  Chardonnay Estate Bottled
ur Chardonnay is estate-grown and food-friendly with complex, toasty oak, ripe apple, and a crisp, mineral character. Food pairings: Roasted beet, caramelized onion, and Stilton grilled pizza; feel-good mushroom soup; a salad of frisée with poached eggs and crispy bacon vinaigrette; or farm-raised chicken, seared and braised in Hopkins Chardonnay, with garlic, fennel, picholine olives, and vine-ripened tomatoes.
We are pleased to offer an authentic farmhouse version. The appley freshness is its primary charm, but beneath is a complexity of mild tannin and minerally crispness. This is terrific with a seafood starter or as an ingredient in the braising of chicken or rabbit. It's most perfect as an accompaniment to a ripe camembert.
  Duet 04 Estate Bottled
"You asked for a low-oak Chardonnay at a great price-here it is!" Our new estate grown and bottled dry white wine is a blend of Chardonnay and Vidal Blanc. This wine has a pretty nose of honeysuckle, crisp granny smith apples, hazelnut and stone fruit. Food suggestions: caramelized onion, roasted cauliflower and gruyere soup, curly endive, crispy bacon and Roquefort salad, herb roasted chicken with butternut squash, blue cheese and sage gratin, grilled foccacia with crème fraiche, smoked salmon with capers and red onion or roast duck.
  Estate Bottled Sparkling Wine
A traditional methode champenoise blend of barrel aged Chardonnay & Pinot Noir. The high quality of this hand picked vintage brings out a creamy richness yet has delicate fruit. Something special.
  Highland Estate
A medium-bodied, dry red blended from select French-American Hybrid grapes, this wine offers a splendid bouquet and black- currant overtones. Marvelous with roast lamb, steaks and chops or hearty pasta dishes.
  Ice Wine
Estate-bottled, the traditional way. It shows harmonious, ripe fruit flavors of apple, peach preserve, and apricot. Perfectly sweet with well-balanced acidity. Food pairings: Peach and plum crostada, French apple tart, crême brulée, or simple sugar cookies.
  N.V. Estate Bottled Sparkling Wine
Our brut (dry) sparkling wine is crisp and well-balanced with hints of hazel-nuts and fresh bread. Crafted with care in the traditional Champagne method, each bottle of this elegant wine is three years in the making.
  Peach Wine
Made from a carefully-chosen blend of farm-grown peaches, our semi-sweet peach wine has sumptuous fruit flavor and smooth, peachy body. Enjoy with apricot-serrano glazed chicken; Black Forest ham; Dijon, mango chutney & sharp cheddar panini; grilled sea scallops with mango, papaya & pineapple salsa; sweet potato, grilled onion, and chêvre quesadillas.
  Sachem's Picnic
This semi-sweet, ruby-colored wine is perfect for picnics and outings or a relaxed dinner by the fire. Versatile Sachem's Picnic is great with pizza, lasagna, rustic tortas and pastas.
  Vidal Blanc
This late-harvest dessert wine is luscious and nectar-sweet with wonderful flavors of orchard fruit and hazelnuts. Food pairings: Grilled, rum-marinated ripe pineapple with rum raisin ice cream; Maine blueberry pie; or simple lemon bars.
  Vineyard Reserve Estate Bottled
Made from our estate grown Seyval Blanc and Vidal Blanc grapes. This wine is clean, crisp and dry with a beautiful fruit finish. It is perfect with many grilled foods or a mandarin orange salad with almonds.
  Westwind Estate
A refreshing semi-sweet white wine. Enjoy this well balanced wine with light foods such as fennel and orange salad with shaved parmesan cheese and black olives or roast chicken with lemon and rosemary.
