IL Cuore Wine Cellars IL CUORE (eel-quarry) means "The Heart" in Italian. The name is a tribute to the Italian immigrants who first planted the North Coast of California to vine in the late nineteenth century. Our wines are produced from choice grapes grown in Mendocino County. The success of wine grapes here has long been attributed to complex soils, warm daytime temperatures and cool nights. A hallmark of the IL CUORE style is the gentle use of oak to allow the natural fruit qualities of our grapes to become the focal point of the wines. Our main goal is to produce wines of quality and character at a price suitable for daily consumption. Our hope is that IL CUORE wines will be consumed with good food as part of a healthy and passionate lifestyle. Our first wine was a few hundred cases of 1989 IL CUORE Cabernet Sauvignon. We often asked why wine has been slow to become accepted in this country as a daily part of a healthy lifestyle as it is in Europe. We think that fruit is what is missing in wine for many people. The elements of wood, earth, flint and chalk that are often found in wine are not for everyone! We saw an opportunity to produce wines that emphasize the soft, fresh flavors of grapes grown in California's best North Coast vineyards. We minimize oak aging to bring out the natural flavors of cherries, berries and plums in our reds and the crisp apple and ripe pear flavors of our Chardonnay! It is also our belief that one shouldn't have to pay a special occasion price to get a bottle of well made, interesting wine.

  Barbera
This vintage is 100% Barbera. The bright ripe raspberry aromas and rich cane fruit flavors offer attractive complexity. Barrel aging was completed in seasoned sixty-gallon oak cooperage to sculpt tannins and mature the wine, similar to the celebrated Barbera d’Alba of Northern Italy. IL CUORE Barbera is recommended with lamb dishes, fresh pork sausages, smoked or slow grilled meat including ribs, and creamy risotto. The firm acidity makes it a fine compliment to aged cheeses. Or try IL CUORE Barbera by the glass during your next Bocce match!
  Cabernet Sauvignon
  Chardonnay
This vintage of IL CUORE Chardonnay was produced from grapes grown exclusively in the cool coastal region of Mendocino County. Vineyards in this area invoke Chardonnays that are fresh with apple and pear flavors, complemented by floral nuances in the bouquet. A nine percent component of Viognier was blended to enhance aromas and add complexity on the palate. The fresh, graceful style of IL CUORE Chardonnay results from cold fermentation in small stainless steel vessels and small components of barrel fermentation in mostly neutral French oak cooperage. The gentle use of oak in our winemaking offers versatility with a wide range of foods. Only 2,785 cases produced.
  Chardonnay
This vintage of IL CUORE Chardonnay was produced from grapes grown exclusively in the cool coastal region of Mendocino County. Vineyards in this area invoke Chardonnays that are fresh with apple and pear flavors, complemented by floral nuances in the bouquet. A five percent component of Marsanne was blended to enhance aromas and add complexity on the palate. The fresh, graceful style of IL CUORE Chardonnay results from cold fermentation in small stainless steel vessels and small components of barrel fermentation in mostly neutral French oak cooperage. The gentle use of oak in our winemaking offers versatility with a wide range of foods. 4,827 cases produced.
  Rosso Classico
Rosso Classico creates a rich and exuberant expression of berries, plums and ripe cherries. Sangiovese, the principle grape variety of Chianti, contributes effusive ripe cherry flavors and good acidity to cut through spicy cuisine. Old Vine Carignane offers deep fruit flavors and structure while Zinfandel from this region provides jammy complexity and spicy character. Syrah from old plantings adds succulent plum nuances and great color. The fruity, spicy flavor will enhance a diverse range of cuisine, including comfort foods such as braised lamb shanks, roasted herbed chicken, classic Italian dishes and especially Mediterranean style grilled meats. Rosso Classico is excellent served with oven-roasted salmon, grilled eggplant, and has the fresh acidity to marry with spicy cuisine and dishes with tons of garlic!
