Dakota Creek Winery After years of amateur winemaking, we have bowed to the encouragement of family and friends and made the plunge into the world of commercial winemaking by forming Dakota Creek Winery, LLC. Our winery is still under construction, so we are fermenting our 2005 wines in temporary facilities. Watch for our Grand Opening Party when we move to the finished winery! Our philosophy is to select only the finest quality grapes from Washington’s premium grape growing regions, hand-make the wines using gentle fermenting and cellaring techniques to bring out the “terroir” of each vineyard, and market superlative wines at an affordable price. The process begins early in the year by negotiating with select vineyards whose viticultural practices meet the demanding requirements for our wines. As fall approaches, we keep in close communication with these growers to assure harvest of each variety at the peak of ripeness with an optimum balance of pH, sugar and acid. The hand picked grape clusters are inspected and personally transported to the winery by our staff to assure the grapes are maintained in pristine condition by tender treatment. Upon arrival at the winery, the grapes are immediately sorted, destemmed and carefully crushed. Only free run and light- press juices are used in the Dakota Creek wines. Fermentation is conducted in small batches in stainless steel tanks. All our 2005 wines, except the unoaked Chardonnay, are aged in new American and/or French oak barrels. To assure minimal manipulation, each lot undergoes extensive laboratory testing throughout its production. For the blended wines, like our Firefighter Red, the blending process is performed just prior to bottling to assure a perfect balance of the finished wine.

  Cabernet Sauvignon
The wines from this vintage look to be big, bold and well balanced, boasting complex aromas of blackberry, blueberry and plums with mild black pepper notes. Long barrel aging in American oak will pleasantly smooth the natural tannins of this varietal.
  Chardonnay
This grape shows promise of apple, pear and vanilla, with some apricot flavors that will become buttery and long lasting on the palate with a pleasing finish. The oaked version will be aged in new American oak barrels with a medium toast.
  Firefighter Red
This is a blend of pressed juices of Cabernet Sauvignon, Syrah and Merlot grapes. You will note the black cherry and ripe berry aromas and flavors nicely framed by smooth, polished tannins and a generous finish. As a tribute to the men and women who protect our homes and businesses, a portion of the proceeds from each sale of 2005 Firefighter Red will be donated to North Whatcom Fire & Rescue Volunteer Firefighter's Associations. Wine critic F. Tessier describes our Firefighter blend as "a gutsy, well-proportioned muscular red with good buns."
  Merlot
Our processing of this vintage will produce a wine that shows black cherry, currant and spicy notes, with a wonderful dark color of garnets. It will be full in the mouth with a nice maritage of oak, balanced with tannin and good acidity. We have selected a special hybrid French and American oak barrel for aging our 2005 Merlot.
  Pinot Gris
This refreshing unoaked picnic wine is crisp light and well balanced. Pinot Gris is the only wine we make that is not crushed at our winery. To preserve the elegant nuances of pear, apple, peach and spice we have the grape clusters crushed and pressed near the vineyard and transport the chilled juice to our winery for precise and delicate fermentation.
  Syrah
National recognition for Yakima Valley Syrahs has lead to a wide consumer appeal of this Rhône varietal in the past few years. Syrah grapes turn into big, dark, intensely concentrated wines with aromas and flavors of blackberries, black currants, roasted coffee and leather. To develop the ultimate this fantastic grape has to offer, we have selected a T.W. Boswell Côtes Du Rhône French oak barrel for aging.
  Unoaked Chardonnay

  Viognier
Viognier grapes are often difficult to grow, but the unique 'terrior' on the slopes of Elephant Mountain provide an excellent foundation for this premium wine. By giving it a very light exposure to American oak we soften the layered flavors of tropical fruit and give it a creamy mouthfeel. The wine boasts a complex orange blossom and ripe apricot bouquet.
