Covington Cellars was founded in 2002 by David and Cindy Lawson. Our shared passion for wine has taken us all over the US and abroad. David studied winemaking at the prestigious University of California, Davis and Cindy focuses her time studying the culinary arts and the art of wine and food pairing. What a great combination! Check out our recipes page. We both have full time jobs, so the winery is without a doubt a labor of love. Starr, our beloved wine dog, helps when she can as do our two children, Stachia, 17 and Davy, 14. We make very small quantities of wine here at Covington Cellars. Keeping the production tiny allows us to truly make a hand-crafted wine. Our grapes are hand harvested and our wines are fermented in open-top fermentation tanks that are “punched down” by hand 3-4 times per day. The wines are then pressed and gravity fed into barrels for aging. This is a very labor intensive and time consuming process, but we believe it truly offers its rewards in the finished wine.

Rough House Red
“Rough House” is David’s reserve unit’s nickname, so he felt it was the perfect name for this tribute wine. Every year he will carefully select this wine. The 2003 Rough House Red is 100% Sangiovese from the Kestrel Vineyard. Aged in 100% new Hungarian oak barrels for 15 months, this wine is nothing short of memorable. Share this wine with family and friends and celebrate the freedom you enjoy!

Seven Hills Cabernet Franc
Not your typical Cabernet Franc! Again from the renowned Seven Hills Vineyard and again a single vineyard designation! It is unusual to have two wines from the same vineyard that don’t improve with blending, but this is the case here. Smoked bacon, ripe cherry, and raspberry all pair nicely with the pleasant oak spice. This is the reason we love Cabernet Franc!

Seven Hills Cabernet Sauvignon
Hand harvesting only the highest quality fruit really pays off in this wine. From only the Seven Hills Vineyard in the Walla Walla Valley, this wine shows what a vineyard can do. 100% Cabernet Sauvignon, this wine has fruit galore with blackberry cherry and black currants with traces of nutmeg and vanilla. You’ll love the richness of this wine and its smooth finish is sure to impress.

Seven Hills Merlot
This wine is a blend of 90% Merlot and 10% Cabernet Sauvignon, both from the Seven Hills Vineyard. This wine is silky and smooth. Cherries and red currants arise in the nose and the finish is long and pleasant. You will enjoy this wine!

Starr Syrah
This wine is a blend of 78% Syrah and 22% Sangiovese. The wines were aged in 100% new Hungarian oak barrels for 18 months. This wine has great structure with a refined softness. A fruit-bomb of black cherry and plum coupled with smoked bacon, a hint of spice and vanilla. This wine is rich, with a luscious mouth feel and a finish that seems to go on forever. Perfect with grilled meats.

Tuscan Red
This wine is a typical Tuscan-style blend, consisting of 60% Sangiovese, 20% Cabernet Sauvignon and 20% Cabernet Franc. Our sexiest wine – ripe black cherries, spice, nutmeg, pepper, vanilla. Aged in 100% new American and Hungarian oak barrels for 18 months, this wine will pair perfectly with a juicy steak or your favorite pasta.
