Cass Winery Cass Vineyards and Winery is located in the rolling, oak-studded hills between Paso Robes and Creston on California's beautiful Central Coast. This area that the vineyard calls home offers quiet serenity for the visitor and a perfect growing season for wine grapes. Sited due east of the “Templeton Gap”, we receive the evening's cooling breezes that the west side of Paso Robles is noted for. We also rest far enough from the coast to generate the heat needed to optimally ripen the Rhone varieties grown in our vineyards. One hundred percent of the wines crafted at Cass Winery are Estate Grown. Our vineyard surrounds our Tasting Room and winery. You can literally touch, taste, see and smell the grapes from the block where they were harvested. The Tasting Room offers picnic fare to enhance the feel of this special environment. Scenic paths lead to oak-shaded picnic areas for our visitors’ complete wine country sensory experience.

Directions
From Rt 101, take 46 East 7.2 miles to Geneseo Road. Turn right, go 4.2 miles to the stop sign at Linne Road. Turn right 100 yards and you are there.

  Cabernet Sauvignon
Our winery partner, Ted, is a true perfectionist. He rode the harvest bins all day, sorting out grape clusters less than perfect. The result was exceptional fruit, optimally ripened, which we fermented in open-top bins until the cap dropped into the must. As our tasting panel discovered during barrel tastings a year later, this wine developed magnificent complexity with the introduction of an additional component, and our final blend consists of Cabernet Sauvignon 80% and Syrah 20%. You’ll find this rare wine an unusually fruit forward Cabernet, with rich flavors of cherry and blackberry.
  CassaNova Rosé Cuvée
It is hard to believe you can get a Rosé out of the deep red berries of Mourvedre. It took an extremely light press right after picking. We then fermented it in the barrel to give it a creamy texture and blended it with a Grenache Rosé. Mourvedre adds complexity and flavors not normally found in Grenache Rosé wines.
  Grenache
The Grenache was cropped from an estimated 10-12 tons per acre to 4 tons per acre to improve the intensity of the flavor and the color. They were hand picked and delivered to Dan Kleck at his facility in Paso Robles in 2004, the year before we opened our own winery. We were very happy with the nose and the flavors of the Grenache all by itself, so we tried this small experimental batch without any blending component.
  Hacienda
Mourvedre is a variety with wonderful fruity characteristics. This Estate block is located directly in front of the Hacienda inhabited by my only vineyard employee who lives on site. He watches over this fruit more than any other variety in the vineyard.

Both varieties were cropped from an estimated 10-12 tons per acre to 4 tons per acre to improve the intensity of the flavor and the color. They were hand picked and delivered to Dan Kleck at his facility in Paso Robles in 2004, the year before we opened our own winery. Since we fermented off site, we could not label the wine “Estate Grown” for this vintage. We crushed the grapes into 1/2 ton bins and punched them down by hand until the must sank into the wine of its own volition.
  Rockin One
In a classic case of the whole being greater than the sum of its parts, this wine reflects that premise in spades. With perfumed aromatic notes imparted by Grenache, elegant mid-palate fruit derived from Mourvedre, and all fully supported by the richness and depth of Syrah, we’ve fashioned an impeccably balanced, easy drinking wine. You’ll be captivated by this wine’s approachability, whether for lunch or casual afternoon sipping.
  Rockin One
The Grenache was cropped from an estimated 10-12 tons per acre to 4 tons per acre to improve the intensity of the flavor and the color. They were hand picked and delivered to Dan Kleck at his facility in Paso Robles in 2004, the year before we opened our own winery. We were very happy with the nose and the flavors of the Grenache all by itself. We added what we felt was the minimum amount of Syrah to add backbone to the wine without overpowering it.
  Roussanne
Delightfully spicy aromatics and creamy texture are the hallmarks of this sparsely planted grape, originating in the Rhone Valley of France. Hand harvested in the brisk morning air, the fresh pressed juice was cold fermented to retain its dynamic fruit and aroma characteristics, and to deliver a long, vibrant finish. Rich in body and flavor, this wine is the perfect aperitif, but can work equally well with bold picnic fare.
  Syrah
Planted to several exciting new ENTAV* clones originating from France, our fledgling Syrah vines produced a paltry 100 pounds of fruit per acre. Anticipating a wine of bold intensity from these low yielding blocks, we opted to ferment in small bins, manually punching-down the cap, to fully extract color and character from the skins. The resulting wine is deeply pigmented, with fresh berry flavors and unique nuances of white pepper on the palate.
  Viognier
An expressive wine with lush texture, Viognier is at its peak when fully ripened under moderately cool summer conditions. Estate grown in the well drained alluvial soils of our vineyard in Paso Robles, this exotic varietal displays the honeyed fruit character and viscous mouthfeel found in the world’s finest white wines. Fermented entirely in barrel and aged “sur lie”, our Viognier is truly a wine for the table, and partners best with rich fish or poultry entrees.
