Still Waters Vineyard

Still Waters Vineyards originally developed as a dream of Paul and Patty Hoover to own a small one-acre vineyard. Their small dream grew into a large reality of about 60 acres producing ten varieties of premium central coast grapes. Eighty percent of the two hundred tons of fruit produced is sold to exclusive wineries such as Talley Vineyards, Cinnabar, Clos La Chance Winery and several others throughout the state. The Hoover's commitment to producing only the finest quality fruit reflects in the excellence of Still Waters wines as well as the wineries to which we sell our fruit. The wine making process here at Still Waters is a year-round art with a commitment to the vines. Paul feels the entire process centers on the attention to the details: beginning in February with winter pruning focusing on shoot positioning and the perfect balance of the vines, to spring time shoot thinning and early summer leafing for proper sun exposure, to hand-harvesting at just the optimum sugar level and fruit maturity. Once in the winery, the winemaking process is centered on very small 100-gallon open top fermentors using gravity and Mother Nature to move and rack the wine. Also located on the vineyard is a 100 year-old olive orchard that yields a mixture of Mission, Sevillano and Ascolano olives, pressed using an Italian mill that combines the best of traditional and modern methods. The hands-on approach to farming practiced at Still Waters Vineyards reflects the underlying concept the family has had from the beginning: “Be small, have fun and focus on quality!”

Directions from Highway 101 North or South:
From Templeton, go east on Vineyard Drive. After crossing the river, take the left fork onto El Pomar. Drive 6.7 miles. At the 4-way stop, turn left onto South El Pomar. Go 1.5 miles to Creston Road and turn right. Go 1.2 miles to the vineyard entrance on your left. Turn left into the 2750 Old Grove Lane entrance and follow the signs to the winery and tasting room. Directions from Highway 41 / 46, Fresno / Bakersfield: From Highway 46, turn left (south) on Golden Hill Road. Go 1.6 miles to Creston Road and turn left (southeast). Go 6 miles to the vineyard entrance on your left. Turn left into the 2750 Old Grove Lane entrance and follow the signs to the winery and tasting room.

Chardonnay
This Chardonnay is light and fragrant. Complex, with just the right balance of apple, pear and melon flavors. It was barrel fermented and bottled young to preserve the fresh fruit flavors. Try this with your favorite chicken or pasta dishes.

Hillside Cabernet Sauvignon
Our 2003 Cabernet Sauvignon came from the highest point on the ranch; the shale soils produce a very low yield of less than 2 tons to the acre. This creates a wine which is dark rich and powerful, displaying earthy currant, leather, spice and coffee scents. This wine is aged 22 months in a combination of French and American Oak.

Merlot
Packed with dense rich flavors of currant, cherry and plum. This wine is supported by tannins and barrel flavors of new French Oak leading to a finish of spice, mocha and butterscotch.

Reflections
This magnificent blend of Cabernet, Syrah and Merlot is full of wonderful complex flavors. The wine exudes elegant aromas of currant, blackberry, spices and vanilla. Full bodied, with a solid core of fruit and tannins, the wine has a long rich finish. Serve this wine with your next special dinner. You'll be amazed with its ability to complement the food.

Syrah
This wine is dark, rich and powerful, full of ripe fruit flavors of raspberry, blackberry and plum. The 24 months in French Oak barrels balances the flavors with toasted coconut and vanilla. This wine will bring out the best in beef, lamb or pork entrees.
