Mermaid Spirits

The idea for Mermaid Spirits began in 2011 by David Johnston. His conception was to utilize the best traditional distilled spirits methods with modern production technology and equipment. He believed that many of the traditional methods were developed and continue simply out of practicality or cost and are not truly ideal for making the best quality spirits. Others techniques continue and have been enhanced because they actually do improve the flavors and final product. Mingling the best of traditional with modern techniques will ultimately create superior tasting spirits.
Like a good scientist, David experimented with fermentation and distillation techniques and recipes based on his 19+ years of experience with alcohol production. He wanted to prove to himself and others that his concept was correct. He also consulted friends, family, and friends of friends about his concept and ideas. He met with other craft distillers and learned about what worked for them and what didn’t.
The entire concept continued to ferment but also became stuck on many occasions. Restarting and starting over from scratch seemed to become a weekly occurrence. Starting a business seemed too overwhelming and at one point, David tried to abandoned the idea altogether. He just couldn’t seem to shake the idea and give up. Ultimately he decided to taking a leap and open Mermaid Spirits in Huntingdon Valley.
